Blackeyed Pea Salad

  • 2 15 ounce cans black eyed peas
  • 2 green onions -- chopped
  • 1 apple -- cubed
  • 1 stalk celery -- sliced
  • 1 medium red bell pepper -- chopped
  • VINAIGRETTE
  • 3 Tablespoons lemon juice
  • 2 Tablespoons red wine vinegar
  • 2 teaspoons yellow mustard
  • 1 1/2 teaspoons honey
  • 2 teaspoons olive oil
  • 1/8 teaspoon black pepper

Preparation

Step 1

Combine salad ingredients. Whisk the vinaigrette ingredients together and toss with salad.
