Peanut Butter Chocolate Rice Krispie Bars

Ingredients

  • 1 1/2 cups corn syrup
  • 2 cups smooth peanut butter
  • 1 cup sugar
  • 1 cup cocoa powder
  • 1/4 cup instant coffee powder mixed with 1/4 cup warm water
  • 1/2 cup rum
  • 10 cups Rice Krispies®
  • 3 cups semisweet chocolate chips
  • 2 Tablespoons oil

Preparation

Step 1

Place corn syrup, peanut butter, sugar, cocoa, coffee mixture and rum in a large pot. Heat on low flame until the mixture is smooth (this will take about 5 minutes). Add the Rice Krispies and combine thoroughly while still on the flame. Pour the mixture while still warm onto large, well greased 1 inch deep cookie sheet. Pat mixture very firmly and uniformly. Refrigerate until firm, about 1 hour.

Melt chocolate chips with oil on very low flame. Mix until smooth and spread evenly onto cooled mixture. Cool again 1 hour. Cut into bars. Store refrigerated.
