Triple B Crock Pot Soup - Beef, Barley, and Beans

Ingredients

  • 1 cup dried multi bean mix
  • 6 cups water
  • 1 14 ounce can whole tomatoes with juice
  • 3 cloves garlic
  • 2 ribs celery -- chopped
  • 2 medium carrots -- chopped
  • 1/2 medium onion -- chopped
  • 1/2 cup pearl barley
  • 1 pound skirt steak -- cut into chunks
  • 1 1/2 Tablespoons salt
  • 2 teaspoons Italian herb blend
  • Pepper -- to taste
  • 1/2 ounce dried porcini mushroom
  • 3 cups frozen spinach -- thawed
  • 1 1/2 Tablespoons balsamic vinegar

Preparation

Step 1

Place all ingredients (except spinach and vinegar) in a crock pot. Cook on low for about 8 hours. Stir in the spinach and vinegar, cover and let soup cook until spinach wilts, about 5 minutes.
