Ingredients

  • Sauce:
  • Corn Tortillas
  • Oil
  • Taco Seasoned Ground Beef
  • Shredded Cheeses
  • Onion, chopped
  • 1/3 c flour
  • 3 TBSP chili powder
  • 3/4 tsp cumin
  • 3 cloves garlic, smashed or 3/8 tsp garlic powder, optional
  • 1/3 c oil
  • 3 cups water
  • 2 tsp beef bouillon granules
  • 2 tsp mole paste
  • 16 oz tomato sauce
  • 1 tsp salt
  • Cayenne pepper, if desired
  • Ground Beef filling: 1 lb ground beef
  • 1 pkg taco seasoning
  • Chili powder and cumin

Preparation

Step 1

Brown flour and chili powder. Add cumin and garlic. Add oil and make a paste. Boil water and add bouillon and mole paste. Stir well. Add tomato sauce. Slowly add water mixture while briskly stirring flour mixture. Simmer for about 20 – 30 minutes. Add more water if necessary.

Soften corn tortillas in hot oil. Place small amount of sauce on plate. Dip tortilla in sauce and place on plate. Top with beef, then cheese and sprinkle with onion. Repeat depending on serving amount desired. Top with onions & cheese. Place in oven until cheese is melted. Serve with tortilla chips.

Garnish with black olives, sour cream, and avocados if desired.
