Ingredients
- 3 Tablespoons butter -- softened
- 3 large egg white
- 8 ounces fat free cream cheese -- softened
- 1/2 cup finely chopped onion
- 1/2 cup finely chopped red pepper
- 15 1/4 ounce can corn -- drained
- 14 3/4 ounce can creamed corn
- 8 1/2 ounce package corn muffin mix
- 1/4 Teaspoon pepper
Preparation
Step 1
Preheat oven to 375. Combine first three ingredients in large bowl. Stir in onion, pepper, corn and creamed corn. Mix well. Add muffin mix and black pepper, stirring until combined. Pour into 11x7 inch baking dish coated with cooking spray.
Bake for 50 minutes or until a toothpick comes out clean.
