Vegetable Casserole

A wonderful and simple vegetable casserole that is easy and quick to prepare.

Ingredients
- 2 cn french style green beans,drained
- 1 cn shoepeg corn, drained
- 1 cn cream of celery soup
- 1 cn water chestnuts, drained
- 2 sticks of chopped celery
- 1 medium diced Vidalia onion or other sweet onion
- 1 pt sour cream
- 3 c grated sharp cheddar cheese
- 1 stick of butter, melted
- 1 tube Ritz crackers, crushed
Preparation
Step 1
In 3qt Pyrex: add 2cn drained french green beans, 1cn drained shoe peg corn, 1cn cream of celery, 1 cn drained water chestnuts, 2 sticks of chopped celery, 1 medium finely chopped Vidalia(or other sweet onion), 1pt sour cream. Incorporate and spread evenly in dish. Top with 3c. sharp cheddar.
In separate bowl: melt 1 stick butter, add 1 tube crushed Ritz, incorporate well, add to top of casserole.
Cook: uncovered in 350° preheated oven 45 minutes, then broil 1-1/2 minutes to brown topping.
