Chickpea Salad

Ingredients

  • 1 1/2 cups cooked or canned chickpeas
  • 1 celery stalk -- sliced
  • 1/2 cup diced green bell pepper
  • 1/2 cup diced red bell pepper
  • 1/2 small red onion -- minced
  • 3 Tablespoons mayonnaise
  • 2 Tablespoons lemon juice
  • pinch cayenne pepper

Preparation

Step 1

Combine all ingredients in a bowl and marinate for 2 to 3 hours.
