Ingredients
- 5 medium onions
- 1/4 cup canola or olive oil
- 1 teaspoon sugar
- 1 12 ounce bag medium-wide noodles
- 1/2 teaspoon salt
- 1/4 teaspoon ground black pepper
- 4 large eggs

Cut onions in half through the root end, and cut them crosswise into 12-inch semicircular slices. Put oil into a large, deep skillet or Dutch oven over medium heat. Add onions and saute them, separating them into rings, for about 20 minutes, or until lightly browned. Sprinkle sugar on top; continue cooking and stirring until they are greatly reduced in volume and are richly browned and very aromatic. Remove and set aside to cool.
Cook noodles and drain. Spray 10 inch square pan with cooking spray. Preheat oven to 350.
Stir in onions into noodles. Stir in salt and pepper. Add eggs and mix well. Put into pan and cover. Bake covered for 30 minutes. Remove cover and continue baking for about 20 minutes longer or until lightly browned.
