Mashed Chickpea Sandwich

Ingredients
- 1 can 15 oz chickpeas
- 2 Tbsp lemon juice
- 1 1/2 Tbsp evoo
- 2 Tbsp roasted red bell pepper, chopped
- 1 tbsp finely chipped red onion
- 2 Tbsp fresh parsley, chopped
- salt and pepper
- 4 slices bread
- handful of fresh spinach

Preparation
Step 1
1. In a medium bowl, use fork to mash half of the chickpeas. Add remaining chickpeas, lemon juice, olive oil, bell pepper, onion, and parsley. Season with salt and pepper.
2. Spoon onto bread, add spinach.
