- 3 tbs butter, melted
- 3 tbs oil
- 4 lbs russet potatoes, peeled
- 4 shallots, thickly sliced
- coarse salt
- 1/2-1 tsp red pepper flakes
- 8 sprigs thyme

Step 1
In small bowl, combine butter and oil. Brush bottom of round 9 inch baking dish with some butter mixture. With sharp knife slice potatoes very thin. Arrange potato slices vertically in dish. Wedge shallots through out. Sprinkle with salt and red pepper. Brush with remaining butter mixture. Bake 1 1/4 hours. Add thyme and bake until potatoes are cooked through with a crisp top. about 35 more mins
