Ingredients
- 2 14 ounce cans artichoke hearts -- well drained
- 6 Tablespoons butter
- 1/2 cup bread crumbs
- 2 medium onions -- chopped
- 9 eggs -- beaten
- 1/4 teaspoon cayenne pepper
- Salt -- to taste
- 1/2 teaspoon oregano
- 1 pound shredded cheddar cheese
- 2 tablespoons minced parsley
Preparation
Step 1
Coarsely chop artichoke hearts and place in bowl. Melt butter in skillet and mix 2 Tablespoons of the butter with the bread crumbs, reserving for the topping.
Saute onions in remaining butter until just cooked. Combine with remaining ingredients. Mix well.
Pour into 2-quart oblong baking dish and top with buttered crumbs. Bake at 350 for 35-40 minutes or until light brown. Let stand for 10 minutes before cutting into squares.
