Israel Apricot Chicken

Ingredients

  • 1 large chicken
  • 2 Tablespoons oil
  • 2 onions -- cut in rings
  • 1/2 pound apricot preserves
  • 3/4 cup mayonnaise
  • 1/4 cup soy sauce
  • 1/4 teaspoon white pepper
  • 1/2 teaspoon salt

Preparation

Step 1

Heat oil in saucepan and add onions. Fry until golden. Add salt, pepper and preserves. Boil for 3 minutes. Remove from heat, cool slightly and add soy sauce and mayonnaise.

Place chicken pieces in baking dish. Pour sauce over chicken and bake for 1 1/2 to 2 hours.

Can also add potatoes and sweet potatoes to the chicken.
