Rice Curry

Ingredients

  • 2 cups uncooked basmati rice
  • 1/2 cup dried currants
  • 1/2 cup pistachios -- toasted
  • 4 to 6 scallion -- sliced
  • 1/2 cup oil
  • 1/4 cup or more lemon juice
  • 2 teaspoons salt
  • 1 Tablespoon curry powder
  • 1 teaspoon cumin
  • 1/2 teaspoon coriander
  • cayenne pepper -- to taste

Preparation

Step 1

Cook rice.

Combine oil, lemon juice, salt, curry, cumin, and pepper. Add to hot rice when rice is done. Add in currants, pistachios, and scallion.
