Sunny Broccoli Salad

Ingredients

  • 1 bunch broccoli
  • 1 cup dried currants
  • 1 cup sunflower seeds
  • 1/4 cup diced red onion
  • 1/2 cup mayonnaise
  • 1 Tablespoon red wine vinegar
  • 3 Tablespoons sugar

Preparation

Step 1

Chop the broccoli into small pieces. Steam or boil for 1 minute only; then quickly rinse it under cold water and drain very well. Combine the broccoli with currants, sunflower seeds, onion in a medium bowl.

Mix together the mayonnaise, vinegar and sugar in a small bowl. Pour over the broccoli mixture and toss. Refrigerate the salad for at least 2 hours before serving.
