Silan Roasted Sweet Potatoes and Leeks

Ingredients

  • 6 sweet potatoes -- cut into 1 1/2 inch chunks
  • 2 large leeks -- sliced into 1/2 inch thick rounds
  • 1/3 cup olive oil
  • 1/3 cup silan date honey

Preparation

Step 1

Preheat oven to 400. Cover jelly roll pan with aluminum foil.

Toss the sweet potatoes and leeks with oil. Pour into a single layer onto pan. Roast uncovered for 30 minutes. Remove from oven and drizzle on the silan. Coat well. Roast uncovered for an additional 15-20 minutes.
