Zucchini and Tomatoes

Ingredients

  • 1 teaspoon olive oil
  • 4 cups sliced zucchini
  • 1/2 cup chopped onions
  • 1 clove garlic -- crushed
  • 1 14.5 oz can whole tomatoes -- undrained, chopped
  • 1 teaspoon chopped fresh oregano
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper

Preparation

Step 1

Coat a large saucepan with cooking spray; add oil. Place over medium-high heat until hot. Add zucchini, onion, and garlic; saute until onion is tender.

Add tomato and remaining ingredients. Bring to a boil; reduce heat, and simmer, uncovered for 35 minutes or until zucchini is tender and liquid is absorbed.
