Black Bean and Corn Salsa

Ingredients

  • 1 can corn-drained
  • 1 can black beans drained
  • 1/4 cup oil
  • 1/4 cup red wine vinegar
  • salt
  • 1/8 teaspoon hot sauce
  • 1/2 cup red onion chopped
  • 1/2 cup red pepper chopped
  • 1 ripe avacado chopped
  • 1 plum tomato chopped
  • 2 scallions chopped
  • 1 tablespoon chopped fresh cilantro

Preparation

Step 1

Mix all together and marinate 3 hours. Before serving, add some chopped tomato, a chopped avacado and some chopped scallions. Serve with tortillia chips. (The scoops work real well with this dip)
