Mandarin Orange Marmalade

I have a tree of Mandarin Oranges and here is what I do with them. Make Marmalade.I make Orange Marmalade from the Oranges on my other tree. This works great. Make small batches - no more than twice this one.

Ingredients

  • 3 med. Mandarin oranges
  • 1 Lemon
  • 1 cup Water
  • 1 1/4 cup of sugar

Preparation

Step 1

Remove the peal from the fruit.
Remove only the yellow part from the lemon - try and not get the white.
Using a scissor or sharp knife cut the peelings in very small slivers.
Place the slivers and water in a non-reactive pan. Bring to a boil and reduce to simmer. Cover and simmer for 30 minutes.

Chop the orange & lemon pulp very fine - or blend in blender, remove any seeds and as much of the white as you can. Add to the sauce pan - cover and simmer another 30 minutes.

Now - add the sugar - uncover and simmer again for another 10 to 15 minutes until it is thick and forms like gel. Stirring frequently, remove from the heat.

Now if you are going to use this right away, put it in a jam jar and refrigerate. For long term - ladle into Jam jars, and process in a boiling water bath for 10 minutes, put on the lids & rings, tighten the ring and let them cool.
