Backyard BBQ Chicken

Delicious barbecue chicken, corn, and chopped bell pepper are cooked in foil packets-and clean-up is a breeze

Ingredients

  • 4 sheets foil (12/18 inches each)
  • 4 (4 oz) boneless skinless chicken breast halves
  • 1-2 cups barbecue sauce
  • 1 (10 oz) package frozen whole kernel corn
  • 1/2 cup chopped green pepper
  • 1/2 cup chopped onion

Preparation

Step 1

Preheat oven to 450 or grill to medium-high.

Center one chicken breast half on each sheet of foil. Spoon barbecue sauce over chicken. Top with vegetables.

Bring up foil sides. Double fold top and ends to seal packet, leaving room for heat circulation inside. Repeat to make 4 packages.

Bake 18-22 minutes on cookie sheet in oven or 12-15 minutes in covered grill.

During last 5 minutes if you want you can open foil packet to vent so chicken won't be soggy and watery.
