Ingredients
- 1 lime
- 1 1/2 bunches cilantro leaves and stems
- 1 sliced garlic clove
- 2 t grated pecorino romano
- 8 oz whole wheat spaghetti
- 3 t roasted, shelled pumpkin seeds
- 1/4 c evoo
Preparation
Step 1
1) zest lime, then juice it to make 1 1/2 t . pulse zest, juice, cilantro, garlic, cheese and evoo in food processor. add salt and pepper to taste. process til smooth
2) meanwhile, cook spaghetti til al dentate and drain. return to pot and toss with pesto. top with seeds.
