Ingredients
- saute together until tender:
- 1 small lean beef steak or chicken breast chopped fine
- 1 medium onion
- 2 stalks celery chopped
- 3 large cloves garlic minced
- 3 T EVOO
- stir in:
- 2 can chicken stock
- 1 quart veggie broth or water
- 1 sm can pumpkin
- Then add:
- 2 cups chopped cabbage
- 2 turnips chopped
- 2 parsnips chopped
- 1 pkg frozen mixed veggies
- 1 can creamed corn
- 1 can pinto beans or kidney beans (rinsed and drained)
- 1/2 cup pearl barley
- 1 bay leaf
- parsley and basil to taste

Bring to boil and reduce heat and simmer 1 hour.
