POTATOES THUNDERBOLT

Ingredients

  • 1 cup fresh yellow corn cut from cob (about 2 ears)
  • 2 cloves garlic minced
  • 1 tablespoons butter melted
  • 4 large baking potatoes peeled and uartered
  • 1/2 - 3/4 cup warm milk
  • 1 teaspoon salt
  • 1/8 teaspoon pepper
  • 2 teaspoon chili powder
  • 1/2 teaspoon ground cumin
  • 1 (4.5 oz.) can green chiles
  • Chili Powder for garnish

Preparation

Step 1

Cook corn and garlic in butter in a skillet over medium high heat, stirring constantly, until tender, set mixture aside. Cook potatoes in boiling water to cover 20 minutes or until tender. Combine potatoes and next 5 ingredients in a large bowl, beat at medium speed with an electric mixer until smooth. Stir in corn mixture and chiles. Garnish if desired with chili powder.
