Ingredients
- 8 eggs -- separate out yolks
- 1 cup sugar -- divided
- 1/3 cup oil
- 5/8 cup potato starch
- 1/3 cup orange juice
- 1 teaspoon baking powder
- 1 teaspoon vanilla extract
- FILLING
- 1 1/2 8 ounce containers Rich's Whip
- 2 3 ounce boxes instant vanilla pudding
- CHOCOLATE GLAZE
- 6 tablespoons hot water
- 6 Tablespoons oil
- 6 Tablespoons cocoa
- 2 1/2 cups confectioners sugar
Preparation
Step 1
Preheat oven to 350. Grease two 9" round pans.
Beat egg whites until foamy. Gradually add 1/2 cup sugar and beat until stiff.
In a separate bowl, at high speed, beat yolks with oil and remaining 1/2 cup sugar for 3 minutes. Add potato starch, orange juice, baking powder and vanilla. Mix to combine.
Gently fold yolk mixture into egg whites. Pour into prepared pans.
Bake until golden, about 35 minutes. Cool completely before assembling.
Prepare the filling: Using an electric mixer at high speed, beat dessert topping until peaks begin to form. Add pudding and continue to beat until combined well.
Prepare the glaze: Using a fork, mix glaze ingredients until a smooth glaze forms.
