Asian Style 3 Bean Salad

Ingredients

  • 1 pound green beans -- cut into 1" pieces
  • 10 ounces frozen shelled edamame
  • 3 Tablespoons oil
  • 3 Tablespoons rice wine vinegar
  • 1/4 cup 100% fruit apricot preserves
  • 1 Tablespoon sugar
  • 1 teaspoon freshly grated ginger
  • 15 ounce can black beans -- drained and rinsed
  • 2 scallion -- chopped
  • Salt

Preparation

Step 1

Whisk together the oil, vinegar, apricot preserves, sugar and ginger. Pour over black beans, green beans, edamame and scallion. Season with salt.
