Ingredients
- 1 pound green beans -- cut into 1" pieces
- 10 ounces frozen shelled edamame
- 3 Tablespoons oil
- 3 Tablespoons rice wine vinegar
- 1/4 cup 100% fruit apricot preserves
- 1 Tablespoon sugar
- 1 teaspoon freshly grated ginger
- 15 ounce can black beans -- drained and rinsed
- 2 scallion -- chopped
- Salt
Preparation
Step 1
Whisk together the oil, vinegar, apricot preserves, sugar and ginger. Pour over black beans, green beans, edamame and scallion. Season with salt.
