Ingredients
- 3 Tablespoons lemon juice
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 1/4 teaspoon Dijon mustard
- 2 Tablespoons olive oil
- 1 cup cooked bulgur
- 1 cup frozen lima beans
- 1 cup chopped yellow pepper
- 1/4 cup finely chopped red onion
- 1/4 cup fresh chives
- 1/4 cup chopped fresh parsley
- 1 can chickpeas
- 1 can kidney beans
Preparation
Step 1
Combine first four ingredients in large bowl. Add oil, stirring with a whisk. Add bulgur and remaining ingredients. Cover and chill.
