Quesadillas

Ingredients

  • 1/2 cup diced red onion
  • 1/2 sweet red pepper -- diced
  • 1 clove garlic -- minced
  • 2 Tablespoons olive oil
  • 1/2 teaspoon salt
  • 12 8" tortillas
  • 2 cups grated cheddar or Monterey Jack

Preparation

Step 1

Saute onion, red pepper and garlic in 1 Tablespoon of the oil until tender. Season with salt. spread 1/3 cup of this mixture on each of 6 tortillas. Sprinkle with cheese and top with another tortilla. Lightly oil the skillet and brown each "sandwich" on both sides until golden. Cut into wedges.
