Yorkshire Pudding Beef Pie

Ingredients

  • 1 pound ground meat
  • 1/2 cup chopped onions -- sauteed mushrooms, and peppers
  • 2 Tablespoons corn relish -- optional
  • 1/4 cup BBQ sauce
  • 1 Tablespoon ketchup
  • Salt and pepper
  • 2 Tablespoons margarine
  • 1 cup soy milk
  • 2 eggs
  • 1 cup flour
  • Salt and pepper

Preparation

Brown the meat in the pan over medium heat until cooked. Drain,and add sauteed vegetables, corn relish, BBQ sauce, ketchup, salt and pepper.

Place margarine into a 10 inch pie plate on a cookie sheet and put in the oven at 425 degrees. The margarine will melt and the pie plate will get very hot, ensuring that the batter will rise later on.

In a bowl, whisk together the eggs and milk, then add the flour, salt and pepper until smooth.

Carefully, take the pie plate out of the oven and pour the egg mixture in the hot dish.

Spoon the meat mixture evenly over the batter, leaving an inch around the edge for the pudding to rise.

Place pie plate back into oven and bake for 25 minutes.
