Spicy Sausage, and Broccoli Rabe Soup

Manipulate spices by using 50/50 mild/hot sausages, or all mild and add chili pepper flakes to taste at end.

Ingredients

  • 1 lb Italian sausage, mild or hot to taste
  • 2 TB Olive Oil
  • 1 large yellow onion, chopped
  • 5 cloves garlic, thinly sliced
  • 6 c. chicken broth
  • 1/2 bu broccoli rabe, tough stems peeled, cut into 3/4" pieces
  • 2 TB tomato paste
  • S & P
  • Grated pecorino for serving

Preparation

Step 1

1. In frying pan,m cook sausages over med. heat, turning occasionally, until golden brown and cooked all the way through (15 min). Cool and cut into 1/4" thick slices. Set aside.

2. In large, heavy pot, warm oil over med-hi heat. Add onion, garlic and saute until translucent, about 5 min.

Add broth, bring to a boil.

Add brocolli rabe, tomato paste, sausage. Simmer uncovered until broccoli is tender, 7 - 8 minutes. Season with w & p.

Serve with grated cheese.
