Easy Blueberry Pie

Ingredients

  • Pie crust for 2-9 inch crust
  • 2 1/2 pints fresh blueberries, 5 c
  • 1 tbs freshly squeezed lemon juice
  • 2 tbs milk or cream
  • 4 tbs flour
  • 1/2 c brown sugar + extra to sprinkle on top
  • 1/4 tsp ground cinnamon
  • 1 lrg egg, beaten with 1 tbs water

Step 1

Put bottom crust in buttered 9 inch pie plate. Arrange oven racks on on bottom and one in middle, place cookie sheet on bottom rack. In lrg bowl whisk together lemon juice and milk, gradually sprinkle in 4 tbs flour, whisk until smooth. Stir in brown sugar and cinnamon. Add blueberries and stir to coat. let sit for 5 mins. Pour into prepared pie crust. Place on top crust. Brush crust with egg wash. sprinkle lightly with sugar and place on baking sheet. Bake for 20 mins. reduce heat to 375 degrees and move pie with baking sheet to shelve in center. Bake for additional 30-40 mins.
