Ingredients
- 2 cups instant brown rice
- 8 ounces tomato sauce
- 1 cup salsa
- 1 Tablespoon onion flakes
- 1 1/2 teaspoons ground cumin
- 1 teaspoon oregano
- 1/2 teaspoon garlic powder
- 1/4 teaspoon cayenne pepper
- 1 11 ounce can black beans -- rinsed and drained
- 1 11 ounce can pink beans -- rinsed and drained
- 1 11 ounce can corn -- drained
- Salt and pepper
Preparation
Step 1
In a large saucepan, combine all ingredients except for salt and pepper. Set pan over medium-high heat. Bring to a simmer, reduce the heat to low, cover and simmer until the rice is tender and the liquid is absorbed, about 10 minutes. Fluff with a fork and season with salt and pepper.
