Forty Cloves of Garlic Chicken

Ingredients

  • 1 chicken -- cut into 1/8ths
  • 1/4 to 1/2 teaspoon pepper
  • 1/4 to 1/2 teaspoon paprika
  • 40 cloves garlic -- unpeeled
  • 3 Tablespoons balsamic vinegar

Preparation

Step 1

Preheat oven to 375. Place chicken in bottom of baking dish. Sprinkle with pepper and paprika. Place garlic around and on top of chicken. Sprinkle chicken and garlic with balsamic vinegar.

Bake, uncovered, basting occasionally, for 1 1/2 to 2 hours or until chicken is done.

Press garlic cloves in sieve or colander using the back of a large spoon. Discard peels. Add several teaspoons of the garlic puree to the juices in the pan. Spoon sauce over chicken.
