Ingredients
- 1 16 ounce package frozen peas -- thawed
- 1 small red onion -- finely diced
- 1 2 ounce can sliced black olives -- drained
- 1 15 ounce can chickpeas -- drained
- 1 red pepper -- diced
- 1 cup salted peanuts, cashews, or almonds
- 2 Tablespoons capers -- optional
- 1/3 cup olive oil
- 3 Tablespoons balsamic vinegar
- 1 teaspoon Dijon mustard
- 2 cloves garlic -- minced
- salt and pepper -- to taste
Preparation
Step 1
Mix all vegetables together. Mix dressing ingredients together. Combine and refrigerate until ready to serve.
