Pea Salad

Ingredients

  • 1 16 ounce package frozen peas -- thawed
  • 1 small red onion -- finely diced
  • 1 2 ounce can sliced black olives -- drained
  • 1 15 ounce can chickpeas -- drained
  • 1 red pepper -- diced
  • 1 cup salted peanuts, cashews, or almonds
  • 2 Tablespoons capers -- optional
  • 1/3 cup olive oil
  • 3 Tablespoons balsamic vinegar
  • 1 teaspoon Dijon mustard
  • 2 cloves garlic -- minced
  • salt and pepper -- to taste

Preparation

Step 1

Mix all vegetables together. Mix dressing ingredients together. Combine and refrigerate until ready to serve.
