Mock Mashed Potatoes

These are actually very good. Half the delight of mashed potatoes is the texture and this recipe has that. Also, this review is from a confirmed mashed potato lover.

Ingredients

  • 2 cups Cauliflower, chopped
  • 1 Tbls Sour Cream, (or more to taste)
  • 1 Tbls Butter or Margarine
  • Salt & Pepper to taste

Preparation

Step 1

Steam or microwave cauliflower until very soft. Put cauliflower in a blender or food processor with butter and sour cream. Blend.
Add salt and pepper to taste.
Serve Hot.

Notes: Frozen cauliflower works very well. Grated cheese, minced chives and/or parsley are nice variations to add.
Hand mix these in after blending the Cauliflower.
