Roasted Vegetables with VEGAN Sausages

Ingredients
- 4 Other Smart Sausages® Italian Styleuse 4 pieces, Italian, Chorizo or use both
- 1 lg onionchopped in large pieces
- 1 Portobello mushroom, or several smaller oneschopped in large pieces
- 1 lg tomato
- 1 red cabbage (will turn blue when cooked) chopped in large pieces
- 2 carrotscut into bite sized pieces
- 1 olive oil
- 1 salt & pepper
- Preheat oven to 400° F.
- Cut the Sausages into bite sized pieces and line them in the bottom of a roasting pan. Cover with chopped veggies and sprinkle all with a little olive oil, salt and pepper to taste.

Bake for 30-40 minutes stirring every 10 to 15 minutes - the mushrooms and tomatoes will make it juicy.
This dish is delicious served hot over brown rice with a crusty baguette.
