- 1 pint lime sherbet, slightly softened
- Green food coloring
- 1 pint vanilla ice cream, slightly softened
- 1 qt. raspberry sherbet, slightly softened
- 1/2 cup semi-sweet chocolate chips
- Unhulled strawberries

Step 1
1. The day before serving make "watermelon". With foil, line 8-cup watermelon mold or 8-1/2 x 6-1/4 inch bowl. In a bowl, mix lime sherbet with enough green food coloring to make watermelon rind color. Working quickly with rubber spatulas, evenly spread sherbet inside prepared mold. Freeze at least 1 hour, unril hardened.
2. Cover sherbet in mold with ice cream. Freeze at least 30 minutes, until hardened.
3. In a bowl, mix raspberry sherbet with chocolate chips and spread into mold to fill center. Cover, freeze 12 hours or overnight.
4. One hour before serving uncover and invert mold onto platter. Remove foil. Freeze until serving. At serving time garnish with strawberries, if desired. Slice mold crosswise.
