Ingredients

  • 2 cups White Whole Wheat Flour
  • Dry Ingredients
  • 1/3 cup Coconut Sugar
  • 2-1/2 teaspoons Ground Ginger
  • 2 teaspoons Vietnamese Cinnamon
  • 1/2 teaspoon Ground Cloves
  • 2 teaspoons Baking Powder
  • 1/2 teaspoon Baking Soda
  • 1/4 teaspoon Salt
  • 1 cup Milk Chocolate Chips (optional)
  • 1/2 cup (one cube)Butter
  • Liquid Ingredients
  • 5 tablespoons Coconut Milk
  • 4 tablespoons Molasses
  • 1 Egg Yolk
  • 1 Egg White
  • Icing (optional)
  • 2 teaspoons Fresh Lemon Juice
  • 1/2 cup Powdered Sugar

Step 1

In a mixing bowl, combine all the dry ingredients. Cut the cold butter into about 12-15 pieces and add them to the dry ingredients. With your fingers or a pastry cutter, mix them in until you don't have big hunks of butter and the dough is starting to come together. Make a whole in the middle of the dough and set aside.

In a small mixing bowl, break and separate the egg, putting the egg yolk in the small mixing bowl. Put the egg white in a small bowl and set side for later. Add the coconut milk and the molasses and stir until well blended. Pour the liquid into the whole in the dough and gradually scoop the dough into the center with a fork. Keep doing this until the dough comes together. Add a little more coconut milk if needed.

Pour the dough onto a cutting board or a sheet of parchment paper, what every works best for you. Gather the dough together and shape into a circle or a square. Cut the dough into desired shapes and place them on your baking sheet lined with parchment paper or silpat. Stir the egg white with a fork and brush on top of the scones with a pastry brush. If you don't want to top them with a glaze, you can sprinkle them with sparkly Sugar in the Raw.

Bake in a preheated oven set at 425 degrees for 15-20 minutes. Let cool completely if you are going to drizzle them with icing.

For the icing, mix the powdered sugar and the lemon juice together and drizzle over the cooled scones.
