Spinach and Bow Ties

Ingredients

  • 3 Tablespoons butter -- divided
  • 2 small shallots -- minced
  • 10 ounces frozen chopped spinach -- thawed and drained
  • 1 cup heavy cream -- divided
  • Salt and pepper -- to taste
  • 8 ounces bow tie pasta -- cooked
  • 1 cup Parmesan cheese

Preparation

Step 1

Melt 1 tablespoon butter in saucepan over low heat. Saute shallots, stirring often so they do not brown. Add spinach and mix well for one minute.

Add 3/4 cup cream, salt and pepper. Continue to stir until just heated through. Taste and adjust seasonings.

Raise heat just enough to bring cream sauce to a simmer. Add remaining cream and butter and return to a simmer again.

Place pasta in serving bowl and toss with sauce. Add Parmesan cheese and toss again.
