Chicken Cacciatore with Linguine

Sandy’s favorite! Great with salad, bread, and red wine!

Ingredients

  • 4 whole skinless and boneless chicken breasts
  • Italian Seasoning spice mix
  • 1 1/2 Tablespoons oil
  • 1 medium onion, chopped or sliced
  • 1 green pepper, diced
  • 1 clove garlic, minced
  • 1 16 ounce can stewed tomatoes with their juice
  • 1 16 ounce can tomatoes with their juice
  • 1/2 cup white wine
  • 12 ounces linguine (or ziti or rigatoni)

Preparation

Step 1

• Cut up chicken into cubes. Sprinkle with Italian Seasoning. Heat 1 Tablespoon of the oil in a large skillet with a cover. Brown the chicken well on both sides. Remove the chicken from skillet and set aside.

• Add the remaining oil to the skillet, and sauté the onion, garlic, and green pepper for about 3 minutes.

• Add the stewed tomatoes with their juice, tomatoes with their juice, and wine and bring mixture to a boil

• Add the browned chicken pieces, reduce heat, cover the skillet, and simmer for about 25 minutes.

• Cook noodles according to package directions. Serve the chicken mixture on top of the noodles.
