Ingredients
- 2 chickens -- cut up
- 1/2 to 1 onion
- 3 cloves garlic
- mexican seasoning
- 1 can ginger ale
- 1/3 cup oil
- tortilla chips -- crushed
- matzo meal
Preparation
Step 1
Grind onion and garlic in food processor until it makes a paste. Add generous amount of spice. Use plenty as most of it will be removed before cooking. Rub onion-garlic spice mix on the chicken. Put chicken in a ziploc bag. Mix ginger ale and oil. Cover chicken with mixture. Marinate overnight.
Mix crushed tortilla chips and matzo meal (about 2/3 chips and 1/3 matzo meal). Drain the chicken and brush off some onion paste. Roll chicken in chip mixture. Place in baking pan and bake uncovered at 375 until done.
VARIATIONS:
Indian Chicken: Grind some fresh peeled ginger with onion and garlic. Use cumin and black pepper instead of mexican spices. Roll in bread crumbs or plain matzo meal.
Middle Eastern Chicken: Instead of mexican spices, use shwarma spice mix or other middle eastern spice mix. Roll in breadcrumbs or plain matzo meal.
