Oatmeal Lace Cookies

  • 1 cup flour
  • 1 cup sugar
  • 1 cup old fashioned oats
  • 1/2 teaspoon baking soda
  • 1 cup margarine -- melted
  • 1/4 cup heavy cream
  • 1/4 cup light corn syrup
  • 2 teaspoons vanilla

Step 1

Preheat oven to 350. Line baking sheets with parchment paper or Silpat.

Whisk flour, sugar, oatmeal and baking soda in medium bowl. Whisk melted margarine, heavy cream, corn syrup and vanilla in another bowl, and stir into the dry ingredients until thoroughly mixed.

Using one teaspoon of dough for each cookie, drop dough onto baking sheets spreading them 2 inches apart (they spread a lot!). Bake until cookies are golden brown and lacy looking, about 8-10 minutes. Cool on baking sheets for 2 to 3 minutes then use spatula to lift them off and cool on wire rack.
