Ingredients
- 4 cups chickpeas (2- 19 oz.. cans) -- drained and rinsed
- 2 cups canned stewed tomatoes
- 3 to 4 Tablespoons honey or maple syrup
- 1 medium onion -- chopped
- 1 green pepper -- chopped
- 1 teaspoon dijon mustard
- 1/2 teaspoon cayenne pepper
- pepper -- to taste
Preparation
Step 1
Spray a 2 quart ovenproof casserole with spray. Combine all ingredients and mix well. Cover and bake at 350 for 1 hour.
