Castaway Cake

Ingredients

  • CAKE
  • 2 large eggs
  • 1 cup sugar
  • 1 cup flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup milk
  • 1 1/2 Tablespoons butter or margarine
  • TOPPING
  • 4 Tablespoons butter or margarine
  • 1/2 cup plus 2T. dark brown sugar
  • 4 Tablespoons milk
  • 1 cup sweetened coconut flakes

Preparation

Step 1

Grease and flour an 8 x 8 inch square or 9 1/2 inch round baking pan. Preheat oven to 350.

Place eggs in mixing bowl and beat until frothy. Add sugar and beat on high until the mixture is creamy and lemon colored. Stir in the flour, baking powder and salt.

In a small saucepan, heat the milk with the butter until boiling. Add to the batter, beating to combine. Pour batter into prepared pan and bake for 30 minutes. Remove from oven to cool for 10 minutes leaving the cake in the pan.

For the topping: Melt butter in a saucepan. Add brown sugar, milk, and coconut. Stir to combine. Pour over warm cake.

Place the cake under the broiler for 1 minute watching the whole time carefully to make sure that the topping gets caramelized but not burnt. Cool completely.
