Ingredients
- 2 1/4 cups flour
- 3/4 tera baking powder
- 1/8 teaspoon salt
- 2 sticks margarine -- melted and cooled
- 1/3 cup plus 2 T. confectioners sugar
- 1/4 cup finely chopped walnuts
- 2 teaspoons vanilla
- 3/4 cup mini chocolate chips
- 2 about 2 cups confectioners sugar for dredging
Preparation
Step 1
Preheat oven to 350. Line cookie sheet with parchment paper.
Sift the flour, baking powder and salt. Place melted butter in large mixing bowl. Add sugar and mix. The mixture will appear somewhat lumpy - OK. Blend in the walnuts and vanilla extract. Stir in half of the sifted mixture and all of the chocolate chips. Add the remaining sifted mixture and blend it in to form a dough. Let the dough rest for 10 minutes.
Spoon 1 tablespoon sized quantities of dough and roll into plump balls. Arrange the balls of dough 1 1/2 to 2 inches apart on cookie sheet.
Bake for 14-15 minutes, or until set and light golden on the bottom. Let the cookies stand on the pans for 1 minute, then carefully remove them to cooling racks. Cool for 10 minutes. Carefully dredge the cookies in confectioners sugar. Once they have cooled completely, dredge again.
