CAULIFLOWER****Roasted Cauliflower Salad with Capers and Olives

Ingredients
- 1 small head cauliflower, cut into bite size florets
- Extra-virgin olive oil
- 2 - 3 cloves garlic, thinly sliced
- Pinch of red pepper flakes
- freshly ground pepper and Maldon salt to taste
- 1/4 small onion, thinly sliced
- 2 tbsp. capers, rinsed and drained
- 12 nicoise olives, halved
- 2 - 3 tbsp. red wine vinaigrette or preserved lemon vinaigrette
- handful of salad greens
Preparation
Step 1
* Toss cauliflower with olive oil, garlic, chilies, salt and pepper and mix well. Cook according to recipe for roasted cauliflower and set aside.
* Toss together the cauliflower, capers, onions and olives and drizzle with the dressing, freshly ground black pepper and salt, to taste. Refrigerate if making ahead and bring to room temperature before serving. I liked mine with a handful of salad greens mixed in to it. Dan basically just tolerated it. Good use for leftover roasted cauliflower just for yourself, though.
