Balsamic Parmesan Roasted Asparagus and Tomatoes

Ingredients

  • 1 1/2 lbs asparagus, trimmed
  • 1 1/2 cups cherry tomatoes, cut in half
  • 1 tbs oil
  • salt and pepper to taste
  • 1/2 cup parmigiano reggiano grated
  • 1/2 cup balsamic vinegar
  • 2 tbs basil, sliced

Preparation

Step 1

1. Toss the asparagus and tomatoes in the oil, salt and pepper.
2. Place in a single layer on baking sheet.
3. Sprinkle on Paremesan
4. Roast in a preheated 400 degree oven until they start to caramelize, about 15-20 minutes mixing
half way through
5. Meanwhile, simmer the balsamic vinegar unit it starts to thicken, about 10 minutes--I skip this step and use store bought balsamic glaze
6. Serve asparagus and tomatoes warm, drizzle with glaze and garnish with basil
