  • 8 eggs
  • Salt to taste
  • Freshly-ground black pepper to taste
  • 1 tablespoon oil
  • 1 small onion finely chopped
  • 1 tomato seeded, chopped
  • 3/4 cup diced canned or cooked nopalitos see * Note

Step 1

* Note: Use canned nopalitos, available at well-stocked grocery stores, or packaged fresh nopalitos, found at Latino markets. Fresh nopalitos should be precooked until tender.

Beat eggs with salt and pepper to taste. Heat oil in large skillet over medium heat. Add onion and saute until almost tender, about 3 minutes.

Add tomato and nopalitos and cook 2 minutes. Add eggs and cook until set, stirring gently to combine.

Dish onto plates and accompany with beans and tortillas.

This recipe yields 4 servings.
