Sour Cream Enchiladas

Ingredients

  • Sauce:
  • 2 1/2 cups cooked chicken, shred into large chunks
  • Salt and pepper to taste
  • 1 1/2 pints sour cream
  • 3-6 green onions, sliced
  • 2 cans diced green chilies (Ortega)
  • 1 package corn tortillas
  • 1 can tomato sauce
  • Shredded cheddar cheese
  • Sliced olives
  • Optional:
  • Cumin
  • Red Chili Flakes
  • Cayenne pepper

Preparation

Step 1

Heat tortillas in microwave (about 60 seconds for 12 tortillas)

Mix sour cream, green onions and chiles together in a small bowl.

Add some chicken filling in middle of tortilla. Top with some of the sour cream sauce. Roll and place in baking pan.

Repeat until pan is full. Pour remaining sour cream sauce over top. Top with shredded cheese and olives.

Bake at 325 degrees for 30 minutes.
