Shrimp, Peach and Snow Pea Salad

Ingredients

  • 1 C. Snow Peas
  • 2 Peaches, peeled
  • and diced
  • 1 LB Shrimp, cooked
  • and peeled
  • 2 Tbls. Lime Juice
  • 1/4 C. Olive Oil
  • 8 Romaine Leaves

Preparation

Step 1

Trim the snow peas and cut them in 1/2
then diagonally. Place them in a heat proof
bowl, cover with boiling water and leave
for 1-2 minutes or until they are just softened.
Drain and run under cold water and drain again.
Place in a large salad bowl. Add the diced
peaches and shrimp to the bowl. Mix lightly.
Whisk the lime juice with 1/4 cup olive oil
and salt and pepper. Pour over the salad
and gently mix to combine.
Arrange on romaine leaves.
