Peanut Curry Chicken

  • 1/2 cup package salted peanuts
  • 1 teaspoon curry powder
  • 1/2 cup breadcrumbs, toasted
  • 4 egg whites
  • 2 tablespoons corn flour
  • 18 chicken wings, skins off
  • 3 tablespoons light vegetable oil

Preparation

Step 1

1.Chop peanuts finely in a processor.

2.Mix nuts, curry powder and breadcrumbs together.

3.Lightly beat eggs and corn flour together.

4.Dip chicken nibbles in egg mixture then the crumb mixture. Heat oil in a roasting dish. Place the nibbles in the dish and turn to coat in oil.

5.Bake at 350 degrees F for 20 minutes or until cooked. Serve warm or cold.
