Ingredients
- medium spaghetti squash
- 1/2 cup pine nuts
- 1/4 cup virgin olive oil
- 1/4 to 1/2 lb. oyster mushrooms (any variety will work)
- salt,pepper to taste

Step 1
preheat oven at 350 degrees and pierce squash with sharp knife and roast for 45 to 55 mins. or until squash starts to feel soft,take out and let sit.
saute mushrooms for 5 to 10 mins. in 2tablespoons of olive oil and remove from heat
in frying pan over medium flame heat pinenuts till they start to become fragant about 5 mins.( they will burn)
cut squash in half length wise and scoop out seeds.With a fork shredd squash.
while squash is steaming add pinenuts,mushrooms,olive oil and salt and pepper to taste.Serve in rind right on the table,scoop and eat.
